Recommend you instead check out this excellent open-source free alternative which is updated far more frequently and supports Big Sur: Lulu

Is LuLu (or Hands Off) any useful like Little Snitch? I remember installing them a couple years ago but it wasn't good and flexible as Little Snitch. Maybe the new updates improved I'm sure?

Used all of them and Lulu does the job as well as the others. It all boils down to how you set your rules

yep, I've tried to install it, it was blocked with a message saying that the program was trying to load extensions which would be incompatible in the future.

I had the option to go to system preferences and allow the install, but I'm not in the mood to check again how to do this ( goldfish memory ^^) neither do I want to get my hands dirty ( no pun intended )

I love the open source effort but with LuLu, you cannot even choose what ports or addresses to allow for an app, it's either all or nothing.
At least, LuLu can pop up a message when an app tries to connect outbound so you can configure your command line firewall with that address - but then you block it for every app.

Spinning beach ball of death when I try to start this on Mojave 10.14.1.

And worse than that, when I uninstall it and reinstall the last version that I could get to work, 4.0.0, it now also gets the spinning beach ball, and it never did before. So I’ve given up, deleted the whole thing and moved over to Little Snitch.
