AI dont make "all the work" by itself.
Converting audio to midi, even more polyphonic, is a full time job.

Here it is monophonic, and don't work (demo is obvious).

Can you just tell me which of these is the best and easiest to recognize the sound and convert it to MIDI?
And I heard about Vochlea, but it doesn't seem to be free or available as a cracked version.
