Gullfoss is an intelligent equalizer that listens to a signal and decides how to prepare the audio so that your brain can get the most information out of it. The realtime analysis of Gullfoss uses Soundtheory’s computational auditory perception model to understand which audible elements are competing for your attention. Gullfoss allows for quick and precise fixes that would otherwise be unsolvable or would require significant time and experience to resolve.

Gullfoss is even capable of fixing balancing issues between different sound elements without access to the individual tracks. The internal auditory model allows Gullfoss to make objective decisions about the perceived sound. As a result, mixes processed with Gullfoss will generally translate more consistently between different listening situations.

Gullfoss, enabled by new patent-pending equalizer technology, processes audio with unrivaled sound quality. The equalizer is capable of changing its frequency response more than 300 times per second and without introducing audible artifacts or degrading signal quality. As Decoder wrote on the first page of the comments, you can install blue cats patchwork (you'll find it here) and load the Audio Units plugins through it.
I did exactly that and it works flawlessly.

Gullfoss and other plugins that have appeared here are designed for Intel architecture. If you have the Xcode command line tools installed, you can easily check this with the command:
lipo -info

Here’s an example for Gullfoss:
lipo -info /Library/Audio/Plug-Ins/Components/Gullfoss.component/Contents/MacOS/Gullfoss


You will see this: is architecture: x86_64.

If you open the pkg file using Pacifist and look at the postinstall script, you'll see that it applies the command:

sudo codesign --force --deep --sign -

So there’s no point in recommending it in comments.

The plugins work well under Rosetta, but when you try to open this Intel plugin natively, it can be extremely unstable. Some of its plugins, like those from Pulsar, work fine, but they still put a load on the CPU. There are no issues with plugins under Rosetta/Intel.
Once again, I want to emphasize that these plugins use x86_64 architecture.

This works correctly only under Rosetta/Intel. When you open a DAW natively and the AU plugin does not have an arm64 architecture, it loads it as x86_64 if that architecture is available. With this particular plugin, it's extremely unstable; the plugins from Pulsar also don't work perfectly, but they are somewhat better. There are no issues with them under Rosetta.

I can also add that it behaves differently in some DAWs. For example, Ableton Live 12 crashes when using Gullfoss; it's very unstable, but under Rosetta, it works fine. In Logic and Luna opened natively, there are no crashes. Additionally, there are no crackles or CPU spikes when using Pulsar Massiv; however, in Live 12 running natively, clicks and CPU peaks occur.

In general, plugins work well under Rosetta/Intel. However, if the DAW is opened natively, issues arise depending on which DAW it is. And once again, I want to emphasize that these are still Intel plugins (x86_64) that your DAW tries to open without detecting an arm64 architecture in them; this leads to some inconsistencies in certain DAWsβ€”Ableton Live 12 has specific problems with this.
